Carrot Cake Truffles
Ingredients
- 1 box carrot cake mix (plus ingredients listed on box)
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp Watkins Original Gourmet Baking Vanilla®
- 2 cups white chocolate chips
- Watkins Food Coloring (yellow and red)
- Watkins Green Decorating Sugar
Instructions
- Bake cake: Prepare carrot cake according to package directions. Let cool completely.
- Make filling: Crumble cake into a bowl. Mix with cream cheese, powdered sugar, and Watkins Baking Vanilla until smooth.
- Shape: Roll into 1-inch balls and place on a parchment-lined baking sheet. Chill 30 minutes.
- Melt chocolate: Microwave white chocolate in 30-second intervals, stirring until smooth. Stir in a few drops of Watkins Food Coloring to create an orange coating.
- Dip & decorate: Dip truffles in chocolate, place back on parchment, and sprinkle with Watkins Green Decorating Sugar.
Set: Refrigerate until chocolate is firm, then serve.
