Blueberry Cardamom Muffins with Watkins

Ingredients

  • 2 cups flour

  • 1 tbsp baking powder

  • ½ tsp baking soda

  • 1 tsp salt

  • 1 cup sugar

  • 2 eggs

  • ½ cup vegetable oil

  • 1 cup Greek yogurt

  • 2 tsp Watkins Organic Ground Cardamom

  • ¼ cup orange juice

  • 1 cup blueberries

  • 1 tsp Watkins Baking Vanilla

Crumb Topping

  • ½ cup flour

  • ½ cup oats

  • ½ cup brown sugar

  • 4 tbsp butter, melted

  • 1 tsp cinnamon

Instructions

  1. Preheat oven to 425°F.

  2. In a large bowl, whisk together sugar, eggs, oil, yogurt, orange juice, and Watkins Baking Vanilla.

  3. Add flour, baking powder, baking soda, salt, and Watkins Organic Ground Cardamom. Mix until just combined.

  4. Fold in blueberries.

  5. Fill lined muffin cups, leaving about ¼ inch at the top.

  6. For the topping, combine flour, oats, brown sugar, cinnamon, and melted butter. Sprinkle over muffins.

  7. Bake for 5 minutes at 425°F, then reduce oven temperature to 350°F without opening the oven and bake for 15 more minutes, until golden and set.
