Watkins Whole Roasted Cauliflower

Ingredients


•    1 head cauliflower
•    1 tablespoon olive oil
•    1 1/2 cups sour cream or Greek yogurt
•    1 teaspoon Watkins Organic Ground Black Pepper
•    1 tablespoon Watkins Organic Curry Powder or Watkins Organic Harissa Seasoning
•    1 tablespoon garlic powder
•    1 tablespoon Watkins Organic Chili Powder
•    2 teaspoons Watkins Fine Himalayan Pink Salt
•    Juice of 1 lemon
•    Optional – For Extra Spice: 1 tablespoon Watkins Organic Chili Powder

Directions


1.    Preheat the oven to 400° F / 200° F
2.    Cover a cast iron frying pan or small baking sheet with Parchment Paper and set aside.
3.    Cut off the woody steam and any green leaves from the base of the cauliflower.
4.    In a medium bowl, combine the sour cream with the lemon juice, and Watkins Spices. 
5.    Place the whole cauliflower on the prepared cast iron frying pan or baking sheet.
6.    Pour the sour cream mixture on top of the cauliflower head. Spread the sour cream mixture evenly across the entire cauliflower with a spatula. 
7.    Place the cauliflower in the oven uncovered and roast until the surface is dry and lightly browned, 30 to 40 minutes.
