Ingredients
Coffee Cake
- 1 ½ cups sugar
- ½ cup margarine or butter, softened
- ½ cup shortening
- 1 ½ teaspoon baking powder
- 1 teaspoon Watkins Baking Vanilla
- 1 teaspoon Watkins Pure Almond Extract
- 4 eggs
- 3 cups all-purpose flour
- 1 can (29 oz.) cherry, apple, apricot or blueberry pie filling
Glaze – Optional
- 1 cup powdered sugar
- 1-2 Tablespoons milk
Instructions
- Heat oven to 350 degrees F
- Generously grease jelly roll pan: 15 ½” x 10 ½” x 1” pan or 9” x 13” pan or two square 9” x 9” pans
- Blend sugar, margarin/butter, shortening, baking powder, Baking Vanilla, Pure Almond Extract, and eggs in a large bowl on low speed, scraping bowl consistently.
- Beat on high speed, scraping bow occasionally, 3 minutes.
- Stir in flour
- Spread 2/3 of the batter in jelly roll pan or ½ in each square pan.
- Spread pie filling over batter
- Drop remaining batter by tablespoons onto pie filling
- Bake until lightly golden brown, about 45 minutes.
- Remove from oven and cut into squares
Optional - Glaze:
- Prepare gaze by mixing all of the glaze ingredients until a desired consistency.
- Drizzle glaze over warm coffee cake
