Ingredients
- 1 (15 oz.) can black beans, drained
- 1 yellow pepper, thinly sliced
- 1 red pepper, thinly sliced
- 1 red onion, thinly sliced
- 1 small zucchini, halved and thinly sliced
- 3 tablespoons olive oil
- 1 tablespoon Watkins Ground Cumin
- 1 teaspoon Watkins Garlic Powder
- 1 teaspoon Watkins Cayenne Pepper
- 1 teaspoon Watkins Oregano Leaves
- Watkins Mediterranean Sea Salt
- Watkins Ground Black Pepper
Note: This recipe can also be used with Watkins Fajita Seasoning Mix. Instead of using the individual Watkins products for this recipe, simply sprinkle the Watkins Fajita Seasoning Mix over the sheet pan ingredients before baking.
Instructions
- Preheat oven to 400 degrees. Place black beans, onion, and peppers on a baking sheet
- Drizzle with olive oil.
- Sprinkle with all spices, and salt and pepper to taste.
- Toss to coat the veggies and black beans evenly.
- Bake for 12-15 minutes
- Serve on flour tortillas with your favorite fajita toppings!
