Cinnamon-Spiced Butternut Squash Soup

Ingredients:

  • 1 medium butternut squash, peeled and cubed

  • 1 small onion, chopped

  • 4 cups vegetable or chicken broth

  • ½ cup cream or coconut milk

  • 1 tsp Watkins Cinnamon

  • Salt, to taste

Instructions:

  1. In a large pot, sauté onion until soft.

  2. Add squash, broth, and Watkins Cinnamon. Bring to a boil, then simmer until squash is tender (about 20 minutes).

  3. Blend until smooth, then stir in cream or coconut milk.

  4. Season with salt and serve warm with a swirl of extra cream on to
