Ingredients
For the Crust:
- ½ cup crushed graham crackers
- 1 cup all-purpose flour
- ⅓ cup white sugar
- ½ cup melted butter
- 1 tsp Watkins Baking Vanilla
For the Filling:
- 2 cups sweetened condensed milk
- 1 cup full-fat coconut milk
- ½ cup sour cream
- ¾ cup fresh lime juice
- 2 tbsp lime zest
- 1 tbsp Watkins Coconut Extract
- 2–3 drops Watkins artificial dye-free Green Food Coloring
- 1 cup sweetened shredded coconut (for topping)
Directions
Prepare the Crust:
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine crushed graham crackers, flour, sugar, melted butter, and Watkins Baking Vanilla.
- Press mixture into a parchment-lined 8x8-inch baking pan.
- Bake for 15 minutes.
Make the Filling:
- In a large bowl, whisk together sweetened condensed milk, coconut milk, sour cream, lime juice, lime zest, Watkins Coconut Extract, and green food coloring until smooth.
- Pour over the baked crust.
- Bake for an additional 15 minutes
Top and Chill:
- While still warm, sprinkle shredded coconut over the top.
- Cool to room temperature, then refrigerate for at least 2 hours until set.
- Once chilled, lift out using parchment, slice, and serve.
