Ingredients
For the Crust:
● ½ cup crushed graham crackers
● 1 cup all-purpose flour
● ⅓ cup white sugar
● ½ cup melted butter
● 1 tsp Watkins Baking Vanilla
For the Filling:
● 2 cups sweetened condensed milk
● 1 cup full-fat coconut milk
● ½ cup sour cream
● ¾ cup fresh lime juice
● 2 tbsp lime zest
● 1 tbsp Watkins Coconut Extract
● 2–3 drops Watkins artificial dye-free Green Food Coloring
● 1 cup sweetened shredded coconut (for topping)
Directions
Prepare the Crust:
● Preheat oven to 350°F (175°C).
● In a mixing bowl, combine crushed graham crackers, flour, sugar, melted butter, and Watkins Baking Vanilla.
● Press mixture into a parchment-lined 8x8-inch baking pan.
● Bake for 15 minutes.
Make the Filling:
● In a large bowl, whisk together sweetened condensed milk, coconut milk, sour cream, lime juice, lime zest, Watkins Coconut Extract, and green food coloring until smooth.
● Pour over the baked crust.
● Bake for an additional 15 minutes
Top and Chill:
● While still warm, sprinkle shredded coconut over the top.
● Cool to room temperature, then refrigerate for at least 2 hours until set.
● Once chilled, lift out using parchment, slice, and serve.
