Coconut Lime Bars

Ingredients

For the Crust:

  • ½ cup crushed graham crackers
  • 1 cup all-purpose flour
  • ⅓ cup white sugar
  • ½ cup melted butter
  • 1 tsp Watkins Baking Vanilla

For the Filling:

  • 2 cups sweetened condensed milk
  • 1 cup full-fat coconut milk
  • ½ cup sour cream
  • ¾ cup fresh lime juice
  • 2 tbsp lime zest
  • 1 tbsp Watkins Coconut Extract
  • 2–3 drops Watkins artificial dye-free Green Food Coloring
  • 1 cup sweetened shredded coconut (for topping)

Directions

Prepare the Crust:

  • Preheat oven to 350°F (175°C).
  • In a mixing bowl, combine crushed graham crackers, flour, sugar, melted butter, and Watkins Baking Vanilla.
  • Press mixture into a parchment-lined 8x8-inch baking pan.
  • Bake for 15 minutes.

Make the Filling:

  • In a large bowl, whisk together sweetened condensed milk, coconut milk, sour cream, lime juice, lime zest, Watkins Coconut Extract, and green food coloring until smooth.
  • Pour over the baked crust.
  • Bake for an additional 15 minutes

Top and Chill:

  • While still warm, sprinkle shredded coconut over the top.
  • Cool to room temperature, then refrigerate for at least 2 hours until set.
  • Once chilled, lift out using parchment, slice, and serve.
