Breakfast Casserole

Ingredients

•    1 lb. ground pork sausage
•    8 oz. fresh mushrooms, sliced
•    2 cups potatoes, finely diced or shredded
•    1 medium onion, chopped
•    1/2 cup bell pepper, chopped
•    8 large eggs
•    1-1/2 cups half & half            
•    1/4 tsp. Watkins Black Pepper
•    1 tsp. Watkins Organic Ground Mustard        
•    1/4 tsp. Watkins Organic Cayenne Pepper
•    1/2 tsp. Watkins Mediterranean Sea Salt            
•    2 cups shredded cheddar cheese
 

Directions

Preheat oven to 350F. Lightly grease a 9 x 13 baking dish. Fry pork sausage in a large skillet over medium heat until brown. Drain, reserving 1 Tbsp. fat. Return skillet to medium heat and add onion, potatoes and bell pepper. Cook for 3-4 minutes. Add mushrooms and cook an additional 3-4 minutes until potatoes are soft. Remove from heat. In a bowl, whisk together eggs, half & half, mustard, salt, pepper and cayenne. Put one half of the potato mixture in prepared pan. Pour egg mixture over this. Add remaining potato mixture. Top with cheese. Bake in preheated oven for 30-35 minutes, until eggs are set. Let cool slightly before slicing and serving.
