Chocolate Chip Pumpkin Bread


1 cup/250 mL packed brown sugar

1 cup/250 mL sugar

2/3 cup/160 mL butter or margarine, softened

3 eggs

2 1/3 cups/580 mL all-purpose flour

1 can (15 oz/425 g) pumpkin

1/2 cup/125 mL water

1 tbsp/15 mL Watkins Pumpkin Spice

2 tsp/10 mL baking soda

1 tsp/5 mL salt

1 cup/250 mL mini semi-sweet chocolate chips


Cream together sugars, butter and eggs in large mixing bowl.  Add flour, pumpkin, water, Watkins Pumpkin Spice, baking soda, and salt; mix well.  Fold in chocolate chips.  Pour into 3 greased and floured 8 1/2 x 4 1/2 inch/22 x 11 cm loaf pans.  Bake at 350°F/180°C for 40 - 45 minutes or until bread tests done.  Cool in pans on wire rack for 10 minutes; remove from pans and cool completely.  Wrap in plastic wrap and store in refrigerator.

Makes 3 loaves, 30 servings.
